One Pot Quinoa with Black Bean & Corn with Avocado Dressing

Inspired by this Tasty recipe, I simply decided to make it a bit more healthy. Throw the store-bought salsa out the door (and the high sodium content that comes with it), and replace it by fresh tomatoes! I also added more spices, to make the dish more tasty (pun intended). It’s a really great dish and works perfectly as either a lunch or a dinner.

Ingredients

Makes 4 portion (417 calories per portion)

  • 1 cup of quinoa
  • 1 and 1/2 cups of water
  • 450g of fresh Roma tomatoes
  • 1 tsp of salt
  • 1 tbsp of ground cumin
  • 1 tsp of garlic powder
  • 1  tsp of chilli powder
  • 1 tsp of smoked paprika
  • 1/4 tsp of cayenne powder
  • 1 can of black beans, rinced
  • 1 cup of frozen corn (or any type of corn)
  • salt & pepper
  • 1 avocado
  • 1 garlic clove
  • Juice from 1/2 a lemon
  • 2 tsp of olive oil
  • 4 tbsp of water

Instructions

  1. In a pot on high heat, combine the quinoa and the water and bring to a boil
  2. When boiling, place a cover on the pot and reduce the heat
  3. Simmer for 10 minutes
  4. Place the tomatoes and 1 tsp of salt in a food processor and emulsify, add them to the quinoa
  5. Add the cumin, garlic powder, chilli powder, paprika, and cayenne to the pot
  6. Let simmer for another 15-20 minutes on medium heat, until the liquid has reduced
  7. Add the black beans and the corn, stir and let simmer for another 5-10 minutes.
  8. Taste and season accordingly with salt & pepper
  9. For the avocado dressing, combine the avocado, garlic, lemon, olive oil and water in a food processor
  10. Serve the quinoa with the avocado dressing on top! Enjoy!
