Tofu with Roasted Veggies

I’ve come to absolutely adore and crave tofu at all hours of the day. In this recipe, I basically have it grilled next to some roasted vegetables. I’m a big fan of roasted vegetables too―especially of roasted red onion and butternut squash. This recipe is very simple and makes a perfect dinner!



Makes 1 portion (479 calories)

  • 1 golden potato, chopped
  • 100g of red onion, chopped
  • 170g of butternut squash, chopped
  • 1/2 of a bell pepper, chopped
  • 1/2 tbsp of olive oil
  • 1 tsp of smoked paprika
  • 1 tsp of chili powder
  • 2 tsp of nutritional yeast
  • salt & pepper
  • 100g of tofu


  1. Preheat your oven at 350F
  2. Combine the vegetables with the olive oil and the spices, mix well
  3. Put the veggies in the oven for 20-25 minutes (make sure to check on them)
  4. Meanwhile, cut the tofu in “steak-like” strips
  5. “Grill” the tofu at high heat until slightly brown and crispy
  6. Assemble your veggie & tofu bowl and enjoy!
