Broccoli & Capers Pasta Salad

I am obsessed with spelt pasta! I could eat it every day, which is why I fell in love with this recipe. It is tangy, fresh and very satisfying! I got inspired from “200 Recettes Véganes“, a book with really great vegan recipes. This dish is best served cold, but is also good when it is warmed up. Enjoy!

Ingredients

Makes 4 portions (439 calories per portion)

  • 350g of spelt spaghetti (or any pasta you prefer)
  • 1 bunch of broccoli, cut into thin strips
  • 2 tsp of olive oil
  • 1 red onion, sliced
  • 1 red pepper, chopped
  • 2 tbsp of capers
  • The juice and zest from 1 lemon
  • 2 tbsp of balsamic vinegar
  • 1/4 cup of cooking water (from the pasta & broccoli)
  • Salt & pepper

Instructions

  • Salt a pot of water and bring it to a boil, add the spelt spaghetti and cook for 10-15 minutes (depending on the instructions on the package)
  • When there are 5 minutes left to the cooking of the pasta, add the broccoli to the water, drain when ready (KEEP 1/4 CUP OF COOKING WATER)
  • Add the olive oil, onion and red pepper to a pan on medium heat and cook until tender
  • Add the capers, lemon juice, zest and balsamic vinegar, stir
  • Add the drained pasta, cooking water and broccoli to the mixture, mix well
  • Season with salt & pepper and enjoy!
