How to Make: Vegan Madeleines

It is no wonder that Proust gave mention to these little pastries in “In Search of Lost Time”. They are delicious, soft and can be “veganized” quite easily. This recipe is inspired by Ricardo’s “Lemon Madeleines Recipe”. Enjoy!



3/4 cup of flour
1/4 tsp baking powder
1/4 tsp salt
2 “flax eggs”  (2 tbsp ground flax seed & 6 tbsp of water)
1/2 cup sugar
zest of 1 lemon
1/4 cup + 2 tbsp of vegan butter

And icing sugar to top!


1-Mix the flour, baking powder, and salt together

2-Make the “flax eggs” by combining the water and the flax seeds, set aside for 5-10 minutes

3-Mix the sugar, lemon zest and flax eggs together, fold the flour mixture in

4-Melt the vegan “butter” and fold it in the mixture

5-Refrigerate for 30 minutes, covered

6-Preheat the oven to 400 F, “butter” and flour the madeleine pan

7-Fill up the pan and bake for 10 minutes, let it cool and repeat with the remaining batter

8-Top with icing sugar and enjoy them (dipped in tea)
