I had some perfectly ripe mangos laying around and I wasn’t sure how to incorporate them in my meals… when I thought about my high school days when my friends and I would visit an all-you-can-eat sushi restaurant after school. Despite the lack of freshness and originality of the restaurant (that is another story), all three of us were obsessed with the *mango sushi*. There is something about the freshness and boldness of a mango that really works with nori and rice. So, I decided to recreate those rice rolls! I tried to use healthier ingredients (I decided to ditch the plant-based mayo) and tried to make it more simple. I was finished with my rolls in 10 minutes…and I am slow in the kitchen. Hope you enjoy this simple recipe!
I am obsessed with spelt pasta! I could eat it every day, which is why I fell in love with this recipe. It is tangy, fresh and very satisfying! I got inspired from “200 Recettes Véganes“, a book with really great vegan recipes. This dish is best served cold, but is also good when it is warmed up. Enjoy!
It’s peach season! And what better way to celebrate than by making a delicious peach dessert? This recipe is delicious. I could eat the crumble on its own―it is sweet (but not too sweet), crunchy (thanks to the pecans) and really well-balanced. This is the perfect summertime dessert! The recipe is loosely based on Minimalist Baker’s “Easy Peach Crisp”―I decided not to use any sugar (but substitute it for maple syrup instead) and added some extra goodness to the peach filling.
This recipe is perfect when you want something decadent and warm for dinner… I love this because it takes no time to make. If you love mushrooms, this dish is for you! You can substitute the mushrooms for any kind that you like, for this recipe I used a mix of white, cremini and shiitake mushrooms. Enjoy!
My favourite drink to get at any café is the *matcha latte*. I love it with almond milk, with soy milk, and especially with oat milk. I love it so much, that I decided to recreate it in my morning oats. I love this recipe; the oats get so creamy and it’s so satisfying and warm!
